Ingredients
2 Cod Filets (about 6 ounces each)
1/4 up almond flour
1/4 Cup sliced Almonds
Zest of 1 Lemon
1 Tablespoon Olive Oil
Salt and Pepper to taste
2 Cups fresh Spinach Leaves
Preperation:
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a shallow dish, combine almond flour, sliced almonds, lemon zest, salt, and pepper.
Pat the cod filets dry with paper towels. Brush each filet with olive oil, then coat with the almond mixture, pressing gently to adhere.
Place the coated cod filets on the baking sheet and bake for 12-15 minutes, or until the fish is cooked through and the crust is golden brown.
While the cod is baking, wilt the fresh spinach in a skillet over medium heat with a drizzle of olive oil, salt, and pepper.
Serve the almond and lemon crusted cod on a bed of wilted spinach and garnish with additional lemon zest, if desired.
